Quinoa Burger

These hearty, protein- and veggie-packed patties are perfect for meal prep—make a batch ahead and store in the fridge for up to a week. They hold together well for grilling and pair deliciously with the Tahini Turmeric Dressing for a flavorful, nutritious meal.

Equipment

  • grater or food processor
  • blender

Ingredients
  

  • 1 cup quinioa add to recipe precooked
  • 1 cup squash (winter or summer) puréed
  • 1 cup carrots grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • teaspoon ancho dried powder
  • 1 teaspoon sald
  • 2 TBSP ground flax seed

Instructions
 

Preparing Winter Squash

  • Cut in 1/2 and place in oven at 350 temp for 45 minutes
  • When you can pierce the squash with a fork, take out of oven
  • Cool for a few minutes, then scoop out and purée

Preparing Summer Squash

  • Grate summer squash and use as a grated ingredient

Prepare Flax Seed as Substiute for egg

  • 1 TBSP ground flax seed with water is equal to 1 egg
  • Grind up flax seed
  • 1 TBSP of ground flax seed to 3 TBSP cold water
  • Let sit for 5 minutes, then add to mixture
  • Mix precooked quinoa, puréed/grated vegetables, flax, and spices into a bowl.
  • You can cook on the stove top, oven or grill. Cook to darken each side
  • Enjoy with the Tahini Turmeric Dressing

Notes

Winter squash can be cooked, puréed, and frozen in portions for later use, making quinoa burgers quicker to prepare with less hands-on time. The puréed squash not only adds flavor and nutrition but also acts as a natural binder, helping the burgers hold their shape beautifully.
I have used summer squash, grated for years.  This consistency does not hold as well as the winter puréed squash. Maybe you can purée the summer squash.  Regardless, I have made huge batches of these and they are equally delicious.   
I buy flax seed and blend up a small batch when I use it. Buying it as a whole seed helps preserve the nutrional value of the seed. Flax seed is a great binder and an excellent substitute for eggs in baking.  
Ancho dried powder is so spicy and add a great depth to the burger.  As with any spice play around with it and make it your own.  Use what you have in your cabinets and make this recipe yours.
