INGREDIENTS
2 cloves garlic
1/2 cup green pumpkin seeds (hulls removed)
2 cups arugula, washed and dried, leaves tightly packed 1/4 teaspoons salt
1 tablespoon lemon juice 2 Tablespoons nutritional yeast (optional)
1/3-1/2 cup extra virgin olive oil
DIRECTIONS
- In a food processor, combine garlic, pumpkin seeds, arugula, salt, lemon juice, and cheese or nutritional yeast if using. Blend until a loose paste forms.
- Add olive oil a little at a time, blending and scraping down the sides as needed. Add oil until the desired consistency is reached – a thick but pourable sauce.
- Taste and adjust flavor as needed.

You can use any combination of greens for this pesto. Get creative a mix of arugula, basil, kale, parsley, or any other green that is in season! Just keep the overall amount the same for best results Any kind of nuts or seeds can be used in place of the pumpkin seeds. Try cashews, walnuts, pine nuts, or hemp seeds to switch things up For a stronger garlic flavor, increase the amount of garlic.
