5sweet potatoes

Instructions
Before cooking sweet potatoes; Wash skins and cut into bite size pieces
Parboiling sweet potatoes (option 1)
Start water for parboiling 5 sweet potatoes
Parboil cut potatoes for ~10-15 minutes
OR you can steam potatoes
Steaming sweet potatoes (option 2)
Add water to the steamer
Steam cut potatoes for ~10-15 minutes
After partially cooking your potatoes in water or the steamer
Heat oil in sauté pan
Sauté parboiled potatoes on the stove for ~10 minutes
They are done cooking when you can easily put a fork through them
You can add turmeric, salt or other spices for flavor during the sauté phase
Building the tacos
Use your favorite corn or flour tortillas
Add beans, lime kale and potatoes
add extra toppings like yogurt, cheese, avacado, salsa, hot peppers, fermented foods
