Ingredients
1tbsp olive oil extra virgin
1-5 potatoes cubed, I used a varitey of colors and sizes
4-5 clovesgarlicmince and let sit for 10 minutes
2-3 cups white beans
saltto taste
pepperto taste
lime or lemon juiceto taste
Instructions
In soup pot, sautee the onions with olive oil for duration of potato cooking time
In another pot, boil water and put cubed potatoes in until they are tender enough to stab with a fork, typically 15 minutes
When potatoes are done, put into soup pot, with some of the potato water.
Add minced garlic
Add white beans
Use a immersion blender to blend up ingredients
Add salt and pepper to taste
Serving Soup, some great additions!

Notes
The lime or lemon juice is an acid. An acid will open up and add a great flavor to this soup. You can also use red wine vinegar or another vinegar to add acid.
