Notes
Winter squash can be cooked, puréed, and frozen in portions for later use, making quinoa burgers quicker to prepare with less hands-on time. The puréed squash not only adds flavor and nutrition but also acts as a natural binder, helping the burgers hold their shape beautifully.I have used summer squash, grated for years. This consistency does not hold as well as the winter puréed squash. Maybe you can purée the summer squash. Regardless, I have made huge batches of these and they are equally delicious. I buy flax seed and blend up a small batch when I use it. Buying it as a whole seed helps preserve the nutrional value of the seed. Flax seed is a great binder and an excellent substitute for eggs in baking. Ancho dried powder is so spicy and add a great depth to the burger. As with any spice play around with it and make it your own. Use what you have in your cabinets and make this recipe yours.
