Ingredients
2canswhite beans or 2-3 cups of beans
1jarartichokes in water
1jarsundried tomatoesin extra virgin olive oil
2-3 cupsgreenscan be frozen
Instructions
Add sundried tomatoes to large saucepan, with oil in jar
Add beans and artichokes
Add greens
Warm up and serve with bread or tortillas
Notes
This is a great recipe to use with extra beans in your fridge. You can add spinich or any green you want at the end to wilt. If you have time you can cut up garlic and sauté with the sundried tomatoes.
