Cabbage and Farro Soup

Cabbage and Farro Soup- One pot
A soul warming soup that will keep you and your family healthy this winter
Ingredients
- 1 medium/large onion dice
- 1 tbsp olive oil
- 1 cup farro rinse with water
- 3 cloves garlic mince
- 1 head cabbage thinly sliced
- core cabbage thinly sliced (keep separate)
- salt to taste
- 3 bay leaves
- 8 cups broth or water
Instructions
- On medium heat
- Sauté onions until translucent, with olive oil
- Add farro and toast for 5-7 minues
- Add cabbage core and sauté for 1-2 minutes
- Add garlic and sauté for 1 minute
- Add cabbage and let it "sweat"- cook down for 5-10 minutes
- Add broth/ water and bay leaves
- Cook for 35-40 minutes until farro is done (firm and chewy)
- salt to taste
Notes
When serving you can add parmasean cheese and fresh lemon to the top of your bowl. It’s so delicious!
