Shallot Dressing

Shallot Dressing

This dressing is great for spicy greens. It pairs well with fruit in the salad.

Equipment

  • 1 blender

Ingredients
  

Macerating the shallots

  • 2 head shallots sliced
  • 1 clove garlic sliced
  • 3 TBSP lemon juice about 1 lime
  • ¼ cup white wine vinegar

Adding into macerated shallots

  • ¼ cup olive oil
  • 2 TBSP honey
  • ½ tsp salt

Instructions
 

Macerating the Shallots

  • Let the shallots and garlic sit in the acidic liquid of the vineger and citrus for 15 minutes. This will cut the sharp bite out of the onions and garlic.
  • Add the rest of the ingredients to the blender and blend

Notes

You can substitute
  • lemon for lime
  • rice vinegar for white wine 
  • maple syrup for honey
The more garlic you put in the spicer it will be.  I typically use a small clove so it won’t be to spicy for my kids. 
Use only one container, your blender. Macerate in the blender, when ready to blend  add the rest of the ingredients. 
This dressing can be stored in your fridge for up to a week.
