Steamed Beets

Steamed beets are one of the best ways to enjoy this earthy root—especially when you don’t want to turn on the oven. Serve them warm straight from the steamer for a easy side, or chill them for a refreshing summer secret. Cold steamed beets add a pop of color and flavor to salads, grain bowls, or make a simple snack—plain (a kid favorite!) or dressed up with a splash of balsamic vinegar and a sprinkle of feta cheese.

Equipment

  • 1 steamer

Ingredients
  

  • beets cut off greens, cut off tips, if they are big cut in 1/2

Instructions
 

  • Put water in steamer
  • Add beets
  • Steam for 40 + minutes, until you can put a fork into the beets
    Take off heat when cooked, rinse with cold water and let sit for a minutes, before putting them in the fridge rub off the skin with the side of your thumb.

Notes

The beet water,  It’s full of nutrients!  Use it for a soup, smoothie or to water your plants.
