My version of Maghmour

My version of Maghmour

A vegan stew that understands how dinner should taste. Everyone loves this dish, even the kids!

Servings 6 people

Ingredients
  

  • 1 medium onion diced
  • 1 Tablespoon olive oil extra virgin
  • 4 tomatoes fresh any variety *can use canned
  • 2 eggplant diced, leave skins on
  • 4 cups garbanzo beans fresh or canned
  • 2 Tablespoons sumac berries ground
  • 1 teaspoon salt
  • 3 cloves garlic

Instructions
 

  • Add oil and garlic to a large pot and cook until softened
  • Add tomatoes and cook until broken down
  • Add beans, eggplant, spices and cook until the eggplant is tender

Notes

Serve with really nice bread. 
You can add lemon slices on the side and top with olive oil.
