My version of Maghmour
A vegan stew that understands how dinner should taste. Everyone loves this dish, even the kids!
Ingredients
- 1 medium onion diced
- 1 Tablespoon olive oil extra virgin
- 4 tomatoes fresh any variety *can use canned
- 2 eggplant diced, leave skins on
- 4 cups garbanzo beans fresh or canned
- 2 Tablespoons sumac berries ground
- 1 teaspoon salt
- 3 cloves garlic
Instructions
- Add oil and garlic to a large pot and cook until softened
- Add tomatoes and cook until broken down
- Add beans, eggplant, spices and cook until the eggplant is tender
Notes
Serve with really nice bread.
You can add lemon slices on the side and top with olive oil.
