Potato Soup

What needs to be used up in your fridge? How can get your family to eat the remaining white beans you made a week ago? Potato soup!

Equipment

  • immersion blender or blender

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1-5 potatoes cubed, I used a varitey of colors and sizes
  • 4-5 cloves garlic mince and let sit for 10 minutes
  • 2-3 cups white beans
  • salt to taste
  • pepper to taste
  • lime or lemon juice to taste

Instructions
 

  • In soup pot, sautee the onions with olive oil for duration of potato cooking time
  • In another pot, boil water and put cubed potatoes in until they are tender enough to stab with a fork, typically 15 minutes
  • When potatoes are done, put into soup pot, with some of the potato water.
  • Add minced garlic
  • Add white beans
  • Use a immersion blender to blend up ingredients
  • Add salt and pepper to taste

Serving Soup, some great additions!

  • parmesan cheese
  • parsley
  • lime or lemon juice
  • bread

Notes

The lime or lemon juice is an acid. An acid will open up and add a great flavor to this soup.  
You can also use red wine vinegar or another vinegar to add acid.
