Warm White Bean & Artichoke Sauté with Sun-Dried Tomatoes

This recipe is perfect for using up your leftover beans at the end of the week. It’s a quick, no-fuss meal for those nights when dinner needed to be on the table ten minutes ago. Stock up on these ingredients so you’re always prepared for busy days!

Ingredients
  

  • 2 cans white beans or 2-3 cups of beans
  • 1 jar artichokes in water
  • 1 jar sundried tomatoes in extra virgin olive oil
  • 2-3 cups greens can be frozen

Instructions
 

  • Add sundried tomatoes to large saucepan, with oil in jar
  • Add beans and artichokes
  • Add greens
  • Warm up and serve with bread or tortillas

Notes

This is a great recipe to use with extra beans in your fridge.  You can add spinich or any green you want at the end to wilt.  
 
If you have time you can cut up garlic and sauté with the sundried tomatoes.
