Mediterranean Salad with Pita Bread

This salad was made for me years ago by my mom and sister, and it’s held a special place in both my heart and my taste buds ever since.
I find myself craving it most in the winter, knowing deep down it only truly shines when made ingredients that are in season—ripe tomatoes, crisp cucumbers, and tender salad greens. It’s a dish that belongs to the height of summer, when local gardens and farmers’ markets overflow with vibrant produce.

Servings 4 people

Ingredients
  

  • ½ bag salad greens
  • 2 cucumbers I tend to take the skin off or peel the cucumber in strips, cut into bite size pieces
  • 2 tomatoes cut into bite size pieces
  • ½ jar kalmata olives
  • 3 ounces feta cheese
  • 1 packet pita bread
  • ~3 cups Summer Beans *see recipes for Summer Beans
  • 1 recipe amount Mediterranean Salad Dressing *see recipes for Mediterranean Salad Dressing

Instructions
 

  • Mix all ingredients in a big bowl
  • Add in the Summer Beans
  • Add Mediterranean Salad Dressing
  • Cut up pita bread in half and warm up
  • Stuff Mediterranean Salad into the pita and enjoy!
