Bok Choy, Brown Rice & Tofu bowl with a Peanut Sauce
SERVINGS: 4-6 SERVINGS PREP TIME: 20 MINUTES COOK TIME: 20-55 MINUTES (RICE DEPENDENT)
Ingredients & Directions to make Tofu

- 1 package of extra firm tofu
- If you have time you can press the tofu
- cut into rectangles
- fry on stove top with olive oil and salt
- flip over and cook 7-8 minutes on each side
Ingredients & Directions to make Bok Choy
- 1 onion dice & sauté on stove top with olive oil/salt until translucent
- 1 bunch of bok choy, wash and cut up into 2-3 inch pieces
Place into the pan with translucent onions
- bok choy
- 2 tsp soy sauce or tamari
- 2 tsp rice vinegar
- 1 tsp sesame oil
- Sauté for 4-6 minutes
Ingredients & Directions to make Peanut Sauce
- 3 TBSP peanut butter
- Juice of 1 lime
- 2 inch piece of ginger, grated
- 1 tsp sesame oil
- 2 tsp soy sauce
- 1 TBSP honey/sugar
- Salt and pepper to taste
- 2-4 tsp water
- Whisk to desired consistency, adding more water if needed
Bringing it to the bowl
- Add the rice, tofu, bok choy
- drizzle with peanut sauce
- great with raw radishes
