Ingredients
- 2 TBS of olive oil
- 1 large onion, diced
- 1 butternut squash, peeled and cut into 2 inch pieces
- 4 apples, peeled and cut into 2 inches pieces
- 1 can of coconut milk
- 2 cups of vegetable broth
Directions
- Heat the oil in a large pot while adding onions
- Use a vegetable peeler to remove the Butternut squash’s outer layer, cut into 1-2 inch pieces and add to the pot
- Peel the apples and cut into 1-2 inch pieces and add to the pot
- Add coconut milk and broth. Bring to boil, then drop to a simmer for 20 minutes
- Use an immersion blender (or blender) to puree the soup
Try other varieties of winter squash, Kuri or Acorn squash. This soup is mild. Explore different flavors with spices, like ginger or hot Fresno peppers. Add rice, quinoa or bread to make it a complete meal
