Ingredients & Directions for Macerated (softened) Red Onions
- Place vinegar and onion in glass jar
- Let sit at room temp for 20 minutes (can sit for a week in the fridge)
- 1/2 red onion, thinly sliced vinegar of choice to cover red onions

- Rice vinegar

- For dressing; place following ingredients in jar and shake to combine
- ¼ cup vinegar of choice (from your macerated onions)
- 4 tbsp olive oil
- 1 tsp salt
- ¼ tsp black pepper
Directions for Salad
- In a serving bowl add following ingredients, pour dressing on & mix to combine
- 2 large cucumbers sliced into rounds
- 1 can white beans (drained and rinsed)
- macerated red onion
- Fresh herbs are always a great add
- ¼ cup fresh mint, chopped
